Ingredients for Potato Masala

  • 2 or 3 nos potato (as your requirement)
  • 2 tbs poil
  • ½ tsp mustard seeds (rai)
  • 1 tbsp chana dal  soaked in ¼ cup hot water for 30 minutes
  • 2 nos onion
  • 1 inch or 1 tsp finely chopped ginger
  • 8 to 10 curry leaves (kadipatta)
  • 1 to 2 nos green chilies, chopped
  • ¼ tsp turmeric powder (haldi)
  • 1 pinch asafoetida (hing)
  • ½ cup water
  • 3 tbsp chopped coriander leaves (dhaniapatta)
  • 8 to 10 cashews (kaju), optional
  • ¼ tsp sugar, optional
  • Salt as required

Making Potato Masala

  1. Heat oil or ghee. Fry cashews (optional) and keep aside
  2. On a low flame and add mustard seeds and let them splutter,add the chana dal and saute it for 2 to 3 minutes.
  3. Now sauté the sliced onions, curry leaves, green chilies and ginger till they soften and turn translucent.
  4. Mix well the turmeric powder and asafoetida along with water in simmer for 2 to 3 minutes
  5. Next add the boiled chopped potatoes .
  6. Season with salt and add ¼ tsp sugar for a slight sweet taste.simmer on a low flame for 3 to 4 minutes until the potato masala will thicken.
  7. Stir occasionally
  8. Switch off the flame and then add chopped coriander leaves, fried cashews now and mix well . Keep masala aside

Making Masala Dosa

  1. Heat a cast iron tawa in a low flame and spray some oil.
  2. Spread the dosa batter ( refer page no : 1 for dosa batter preparation ) in a circular motion in tawa.
  3. On a medium flame sprinkle some oil on top and edges
  4. When you see the base has become golden and crispy, spread a portion of the potato masala on the dosa.
  5. Now fold the dosa and serve hot.

Red chutney reciepe for Mysore Masala Dosa: (optional )

  1. Heat a cast iron tawa in a low flame and spray some oil.
  2. Spread the dosa batter ( refer page no : 1 for dosa batter preparation ) in a circular motion in tawa.
  3. On a medium flame sprinkle some oil on top and edges
  4. When you see the base has become golden and crispy, spread a portion of the potato masala on the dosa.
  5. Now fold the dosa and serve hot.
